Healing Veggie Broth

Boost your immune system and warm your soul with this homemade vegan veggie broth. This recipe is rich in minerals and has potent anti-inflammatory and anti-microbial properties. Dr. Lauren recommends you sip regularly for optimal healing benefits!


10-12 cups filtered water

2 Tbsp coconut or olive oil

1 onion, quartered (with skins)

2-3 garlic cloves, smashed

2 cups dark leafy greens, chopped

4 cups mixed veggies/veggie peelings (carrots, broccoli, leeks, celery, green onion)

1/2 cup fresh or dried mushrooms

1/2 Tbsp peppercorns

1 Tbsp fresh or ground turmeric

1 Tbsp fresh ginger, roughly chopped

1 ounce dried seaweed

1/2 cup fresh herbs, roughly chopped (parsley, thyme, oregano, sage)

1 Tbsp coconut aminos (optional)


Combine all ingredients in large pot or slow cooker and simmer covered on low heat for 6-12 hours. Remove from heat and allow to cool. Strain and serve in a coffee mug or as a base to your favorite soups and stews. Also freezes well.
